Lovely and moist, and mine was slightly crunchy on the (I ate an edge piece) - just how I like it. Will probably increase the ginger and decrease the mixed spice next time - and there WILL be a next time 😀

This cake is very easy to make. I added a bit more ginger powder and steam ginger too to give it a bit more of a ginger taste. Nice moist top and can keep for a couple of days.

This is a really nice cake. I added more ginger (3 teaspoons, heaped), some nutmeg and it still came out lovely and moist. The hardest part is waiting for it to cool before eating it!!
