- 1 large egg yolk
- 1/2 cup granulated sugar
- 2 Tbsp. unsalted butter (cut into 1/2-inch cubes and chilled)
- 1 Tbsp. heavy cream
- 1/4 tsp. vanilla extract
- 1 pinch fine sea salt
- 2 1/2 cups strawberries (fresh/frozen, and/or raspberries)
- 1 cup granulated sugar
- 20 slices fresh ginger (or to taste, flavor mellows out as it cools)
- 1 Tbsp. fresh lemon juice
- 1/8 tsp. fine sea salt
- 2 tsp. balsamic vinegar
- 1/8 tsp. cracked black pepper (optional)
- 1/4 cup confectioners’ sugar
- 2 cups fresh strawberries (cut in half, leave some whole for garnish if desire, optional)

- 1 1/2 cups fresh raspberries
