A Joy 2 years ago
The cake was perfectly delish, but there were a lot of plates with boatloads of frosting and filling left on them. Such a rich cake!
I came up short in the coconut pecan filling dept. because I used some on the top so I made an extra 1/4 batch to cover the top. The buttercream frosting was plenty.
Pretty heavy on the sugar, if I did this cake again I would see if I could do it with less sugar and use alternative healthy sweetners (honey etc.
