- 1/2 cup soft goat's cheese (or fresh whole milk ricotta, drained)
- 1/2 cup havarti cheese (shredded)
- 1/2 cup feta cheese (good quality)
- black ground pepper
- salt
- 2 tsp. lemon zest
- 1 Tbsp. fresh cilantro (each, dill and flat leave parsley, chopped)
- 2 tsp. fresh mint (chopped)
- 2 Tbsp. butter (+ more for frying and brushing the tops)
- 1/4 tsp. coriander seeds (ground)
- 5 whole green onions (chopped)
- 5 whole ramps (bulb and leaves, washed, dried the excess water, thinly chopped, when not in season, use spinach)
- 1 large garlic cloves (minced)
- 1 pinch cayenne pepper
- 4 large eggs (beaten with 2 tablespoons water or milk)
