- 2 lb. pork tenderloin (trimmed)
- kosher salt
- black pepper
- 4 Tbsp. peanut butter
- 3 Tbsp. soy sauce
- 4 garlic cloves (peeled, crushed)
- 1/2 tsp. cayenne pepper
- 3/4 cup peach preserves

Directions
- Preheat oven to 375°F.
- Trim the pork tenderloin of fat and silver skin. Season with salt and pepper.
- In a small mixing bowl, combine the peanut butter, soy sauce, garlic cloves and cayenne pepper, mix thoroughly.
- Spread mixture over pork tenderloin and bake uncovered for 30 minutes. Remove from the oven and spread the pineapple preserves over the top of the pork tenderloin.
- Bake for another 10 minutes or until an internal temperature of 145°F is reached. Remove from the oven and let rest for 3 minutes before slicing.
