It was good! I added a few more spices, but loved it. Cooking the spaghetti squash in the microwave saves a bunch of time.

So, I am allergic to mushrooms, but I loved the sound of this recipe. I had to revamp it a little.
In place of the mushrooms I used 1/2 zuchinni squash, a medium red bell pepper (chopped chunky) and a small chopped onion and I only had fresh kale on hand (stems removed). Also after the chicken cooked about 1/2 way, I added 1 cup of low sodium chicken broth (just to help wilt the kale and keep everything moist). I also didn't have any lemon on hand, so that got left out.... ok I guess this ended up being a brand new recipe!!!!
But boy was it yummy! I had to only give it 4 stars because I had to alter the recipe a little due to my allergy, but I also think the broth kept everything from being too dry. This is for sure a "do again dinner"!
