- 1 pinch baking soda (see note below)
- 3 Tbsp. unsalted butter
- 1/2 cup polenta grits (not instant, see note below)
- 2 3/4 cups chicken stock (see note below)
- 1/4 cup parmigiano reggiano cheese (finely grated)
- 1 lb. extra large shrimp (peeled/deveined, 21/25 count, thawed)
- 1 Tbsp. sugar
- 1 Tbsp. sea salt (or Kosher)
- water (for brine)

- 1/2 tsp. crushed red pepper flakes
- 1/4 cup shallots (finely chopped)
- 2 Tbsp. fresh garlic (minced)

- 1/2 lemon
- 1/4 cup fresh parsley (finely chopped)
