- 1 kg tomatoes (ripe, : I prefer Plum tomatoes and grow them in our garden but this is a perfect opportunity to root through the bargain basement at your local market or supermarket)
- 1 Tbsp. honey
- 1 onion (Large, 225g: Peeled and cut into 1cm rings)
- 2 Tbsp. balsamic vinegar
- 1 head garlic (: Broken into cloves but skins left on)
- 4 sprigs fresh thyme (or 2 Tsp Dried Thyme)
- 1 tsp. coarsely ground black pepper
- 1 tsp. coarse sea salt

This cooked up way easier than I thought it would and was delicious! I skipped putting it through a sieve as it didn't seem necessary. I also peeled the garlic, wasn't sure why the skins should be left on per the directions.
