- 2 cups red quinoa (cooked, I used Bob’s Red Mill)
- 2 large eggs (lightly beaten)
- 1 clove garlic (grated on a microplane or crushed using a mortar and pestle)
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- oil (for shallow frying)
- 16 oz. salt (added black beans, rinsed and drained)
- 1 red onion (medium, finely chopped)
- 1 mango (peeled and diced)
- 4 Tbsp. fresh parsley (chopped)
- 2 Tbsp. mango vinegar
- 2 Tbsp. extra-virgin olive oil
- 1/4 tsp. sea salt (plus more to taste)
