  • 1 spaghetti squash
  • 2 heads broccoli (small, washed at cut into medium florets, keep stems separate and slice into inch size pieces)
  • 4 cloves garlic (minced)
  • olive oil
  • 1/4 cup stock (veg or chicken, or water)
  • salt and ground black pepper
  • 1 cup grated Parmesan cheese

    This was good, but needed more of a kick. I suggest siracha, spicy italian sausage, or something like that.

    First time, great. Second time felt squash was overcooked, I had used the water method and I usually don’t so back to just dry roasting.for a third try, added rotisserie chicken and red pepper flakes.

    Turned out great! I threw in some crushed red pepper flakes to give it a little kick!
    It was good! Next time I’d probably put in tomatoes and grilled chicken to make it a little tastier.

    I loved the spaghetti squash and the garlic broccoli but there wasn’t a lot of flavor overall. I added shrimp for lean protein.

    I will definitely add this to my regular rotation. It's delicious and easy. I did add onions and scallions for extra flavor. I also added peas so they wouldn't go bad. I didn't want to open a can of broth to just use 1/4 cup so I used 1/4 cup of water and a small amount of a bouillon cube (msg free).

    Served as a side dish. Surprisingly tasty combination of flavors. I added a healthy dollop of ricotta cheese (maybe a quarter cup) to the squash along with the cheddar for extra creaminess.

    This recipe was amazing. Even my kiddos enjoyed it. I only made one modification which was adding pan seared chicken.

    Really enjoyed this recipe. I am fairly new to cooking regularly, so I go for recipes that are easy and nutrient rich. This fits the bill perfectly. Loved the crunchiness!

    Delicious and simple! We added some mushrooms to the mix and cooked the squash a bit more in with the broccoli and mushrooms. It wasn't quite tender for us out of the oven. Delicious flavor combination!
