- 1 chili pepper (medium milder, such as poblano)
- 16 oz. black beans (cans, drained and rinsed)
- 3 1/2 cups black beans (cooked, from about 1 1/2 cups raw)
- 1 lime (to taste)
- 1/3 cup sun dried tomatoes (sliced, moist, but not oil-cured)
- 2 tsp. ground cumin
- 1 tsp. mesquite seasoning (or smoked paprika, or to taste)
- 1/4 cup fresh cilantro (minced, optional)
- salt
- freshly ground pepper
- romaine lettuce (Shredded, or baby spinach, or a combination)
