- 20 potatoes (20 mini, cut in half)
- 2 Tbsp. olive oil (just enough to coat the bottom of your baking sheet)
- 1 tsp. kosher salt
- 2 Tbsp. butter (can use 1 Tbsp butter/1 Tbsp olive oil or all olive oil, as well)
- 1 Tbsp. chopped garlic (finely)
- 1 Tbsp. finely chopped fresh parsley
- 1/2 tsp. fresh thyme leaves (or a pinch of dried)
- salt (Flaky, for serving)
- lemon wedges (for serving)

I made this recipe for dinner with chicken sausage, caramelized onions and the peppers. Amazing. I first roasted the potatoes on top of the stove and then put the potatoes in the oven for browning and more roasting. In a skillet, I cook the chicken sausage and put it to the side, while I caramelized the onions with the peppers and the sauce from this wonderful recipe. When the potatoes were nice and brown, I Placed them in the pan, then the chicken sausage, and then the peppers and let it cook another 10 minutes. Like magic! This works.

Yummy and easy! Didn’t change a thing. The lemon scared me at first but was really a tasty addition at the end

These potatoes were amazing! The only problem was that I ate too many because they were that good!

Delicious. I didn't use fresh garlic, just garlic powder, but it was still great.

Very good! I needed to roast the potatoes about 5 minutes longer but i think thats because i used large potatoes cut into chunks rather than halved small potatoes
