Garlic and Herb Mushrooms

  • 5 tablespoons butter
  • 7 ounces button mushrooms (small)
  • 4 ounces cremini mushrooms (quartered)
  • 2 cloves garlic (crushed)
  • 4 tablespoons chopped parsley

    Directions

    1. Melt 3 tbsp of the butter in a large heavy-bottomed skillet on high heat. Add mushrooms and garlic; cook, stirring, for 5-6 mins until the mushrooms are soft and golden. Remove from heat. Add 3 tbsp of the parsley and season with salt and freshly ground black pepper.
    2. Mix 2 tbsp butter with remaining 1 tbsp parsley and place on top of the hot mushrooms just before serving.
