- 1/4 tsp. white pepper
- 3/4 tsp. salt (I use kosher)
- 1 tsp. diastatic malt (optional, don't fuss if you don't have it)
- 1/2 tsp. baking soda
- 2 tsp. baking powder
- 2 cups white whole wheat flour (8 ounces by weight)
- 2 Tbsp. cheese (grated Parm, shaken on top before baking, optional)
