Used full stick of butter. Then, after baking, made parmigiana.
6/27: cut thicker, dipped in egg & mayo mixed together, then breadcrumbs. Baked 17 mins a side. Topped with Marinara sauce and shredded mozzarella for 5 more minutes.

Not as tasty or crispy as we had anticipated. Not very nutritional and ruins the health aspect of eating eggplant.

great but i agree not really crispy enough. i ended up cutting it up and mixing with spaghetti and sauce. yummy. i also did 425° on parchment ppr. i did let the eggplant drain with salt for a while and squeezed a little to get more excess water out before dredging.

This was very delicious. Honestly, this is my first time eating eggplant and I must say, I will make this again. May use an egg for the coating along with buttermilk. But still amazing

Super easy to make . Punched up the flavor with a little extra Parmesan . Whole family enjoyed. Definitely making again.

Excellent! I originally baked the eggplant to use in eggplant lasagna but it tasted so good, we barely have enough left to make the lasagna! This one goes in the rotation!

I gave it 5 stars for how easy is... my eggplants are still in the oven but they smell delicious
