    This was super easy to make and modify for one person. The flavor was great! I think next time, I will use the green beans, as I only did the carrots and potatoes. But I loved the way that the carrots turned out. I paired this with just a simple chicken breast with italian seasoning.
    Great , no modifications and I would make it again. So easy.

    This was easy, healthy & delicious!! I will now be making this weekly + seasonal vegetables! >>Easy to pair with chicken (start on chix around the last 20 mins of the veggies it so) >>Will be yummy for breakfast (with an egg) or lunch the next day!

    Delicious!! Read carefully as green beans go in after 20 mins of baking potato and carrot. I overcooked my beans because I put them all in at the same time. Love this with fresh herbs and garlic nomnomnom!

    I accidentally read the directions incorrectly and cooked the green beans with the carrots and potatoes so the green beans were over cooked. But the carrots and potatoes turned out great!
