    Garlic fennel crust is Fantastic!!!! Will use for other proteins too. I rubbed racks with Olive Oil, Salt & Pepper. I seared both sides in a saute pan. Then roasted on top shelf at 450 for 15 min, turned rack over, roasted another 10 min or until 130-135 reached for Med Rare.
