- 1/4 tsp. crushed red pepper flakes
- 4 cups corn (fresh, from 5 to 6 ears)
- 1/2 lb. carrots (peeled and cut into 1/2 inch chunks)
- 1 lb. potato (thin skinned, like yukon gold, cut into 1/2 inch chunks)
- 4 cups vegetable broth (divided)
- 1 Tbsp. starch (corn, or arrowroot)
- 3/4 cup coconut milk (regular or lite)
- 2 Tbsp. fresh lime juice
- salt (to taste)
- black pepper (Fresh, to taste)
- chopped fresh chives (1/2 cup should do it)
- fresh basil (Thinly sliced, 1/2 cup or so)
- radish (Thinly sliced)
- 3 extra (fresh corn kernels)

We had a vegetable garden at home, and I only picked this recipe because we had too many radishes at home, but after today, this recipe occupies a place in my list of favorites. It was absolutely delicious. I made it for lunch, my wife loved it, and I filled my plate at least three times. That night at dinner I also ate some more and the next day at lunch I served myself the last plate. I'm going to repeat this again soon.

This was very enjoyable. Did not have corn starch, but thickened up fine with just blending half the soup. Filling and healthy

It was really good. I did not add the garnish because I didn’t have any of those ingredients, but I don’t think it was missing anything by not having it.
