- 1/2 cup red pepper (chopped)
- 1/2 cup cucumber (chopped)
- 1/2 cup red onion (sliced)
- 1/2 cup chopped tomatoes
- 1/2 cup Kalamata olives
- 1/3 cup chopped fresh herbs (here I’ve used mint, basil, oregano and chives)
- 1/2 cup mayonnaise (plain)
- 1/4 cup lemon juice (alternatively apple cider vinegar is very good too)
- 1 lemon
- salt
- pepper
- 3 Tbsp. whole grain dijon mustard
- 1 Tbsp. sugar
