A super chunky, healthy, and zesty marinara that is so much more than just sauce! Delicious on anything and vegan!

Ingredients

  • 9 Roma tomatoes (peeled)
  • 2 carrots (sliced)
  • 1 onion (large, chopped)
  • 1 bell pepper (chopped)
  • 16 ounces mushrooms (sliced)
  • 6 cloves garlic (diced)
  • 1/2 cup olive oil
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • pepper
  • 2 teaspoons red pepper flakes

    Directions

    1. Saute carrots, onion, and bell pepper in olive oil for about 10 minutes, adding more oil when needed.
    2. Add mushrooms and saute for 5 minutes.
    3. Add garlic and continue cooking for 1 minute.
    4. Crush tomatoes with hands into veggies, season with basil, oregano, red pepper, and salt & pepper, and bring to a low boil. Add remainder of olive oil. Simmer for an hour or when you get too hungry to wait any longer, stirring occasionally and smashing the tomatoes more and more with a wooden spatula.
    5. Enjoy with pasta, meatballs, and/or cheese!
