- 5 oz. tuna packed in olive oil (I love Genova Tonno tuna in olive oil)
- 1 can garbanzo beans (also called chickpeas)
- 1 red bell pepper (chopped)
- 1/4 cup red onion (chopped, or use sliced green onion if you're not a raw onion fan)
- 1 cup chopped parsley (I prefer curly parsley for this)
- 3 Tbsp. extra-virgin olive oil
- 2 Tbsp. fresh lemon juice (I used my fresh-frozen lemon juice)

Great recipe, and even better the day after. Served mine over spinach as a work lunch. Going to make again with either feta or goat cheese crumbled in next time.

I enjoyed this recipe. It's vibrant, light, and fresh. My husband really liked it, and my toddler ate more than I expected. Another reviewer added tomato and goat cheese, and I think that would take this to the next level, so I'll be trying that next time!

i added a Mediterranean seasoning and it made it come to life. so salt with that if it's too boring. either way was good

I loved this recipe! I didn't have the tuna with olive oil only with the brine. Followed the recipe but I couldn't help myself I add some goat cheese and tomato. It was amazing. I bet it would be better with the tuna with olive oil. It was still delicious and will definitely make it again. Thank u for the recipe
