- 3/4 cup flat leaf Italian parsley (packed chopped fresh)
- 1 1/2 cups green onions (chopped, scallions, green parts only)
- 1/4 cup fresh lemon juice
- 1 cup crumbled feta cheese
- salt (to taste)
- freshly ground black pepper (to taste)
- 1 handful kalamata (chopped, or black oil-cured olives, optional)

This salada turned out to be scrumptious! it has the perfect tang from the lemon juice and pop from the olives. Even my bf who had doubt in this salad was pleasently surprised. I followed this recipe to the T but made some additions such as cucumber and beets. Turned out delicious.
