- 1/4 cup Asian pear (about 1/4 of a large Korean/, grated)
- 1/4 cup onion (about 1/4 of large, grated)
- 3 scallions (thinly sliced, optional)
- 2 Tbsp. minced garlic
- 1 tsp. minced ginger
- 1/2 tsp. black pepper
- 1/2 cup kimchi (diced)
- 1/2 cup cucumber (diced)
- 1/2 cup diced onion
- 1/2 cup red cabbage (diced)
- 1/2 cup Asian pear (diced Korean/)
- 1/2 tsp. minced garlic
- 2 Tbsp. chopped cilantro (more for garnish)
- 1 lime (about 1-1/2 to 2 tablespoons)
- 1/4 tsp. pepper (to taste)
- 1 Tbsp. gochujang (Korean red chili pepper paste)
- 1 Tbsp. Tabasco Sauce (or your favorite hot sauce)
- 1 tsp. soy sauce
- 1 tsp. sugar (or to taste)
- 1 Tbsp. ginger ale (you can use other soda or water instead)
- 10 corn tortillas (– 12 4-inch)
