Ingredients

2 SERVINGS
- 1 onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 1/2 Tbsp. peanut oil (or other vegetable oil)
- 2 tsp. curry powder
- 1/2 tsp. chilli powder (adjust depending on the strength of your chilli powder - mine's a stinking hot Indian one so I only used ¼ tsp, which was just right)
- ginger root (grated, about a one inch piece)
- 1 cup roasted peanuts (finely chopped)
- 2 Tbsp. peanut butter
- 1/2 cup malt vinegar
- 1/3 cup sugar
- 1/3 cup chutney (fruit, I used home made tomato chutney)
- 1 cup water
- 1/2 tsp. salt (optional)
- vegetables (Raw and blanched salad, cabbage, carrot, tomato, cucumber, green beans, cauliflower, radish, bean sprouts)
- boiled potato (Cold)
- boiled eggs
- tofu (Fried, or tempeh)
- fried shallots (Crunchy toppings like)
- cooked rice (or noodles)
