    I substituted almond flour for soy flour simply cause I live in the Country and didn't have any in the cupboard, loved that it head together and that it is the best recipe (bread) that I have tried so far....tried 4 types in the month my Son & I have been on Atkins.

    Tried many different low carb breads and this is the best so far! But cannot get the top of the bread to rise... it is like an air pocket. Can anyone tell what to do? I did find taking the paddle out of the bread machine after kneading let the bread expand and become a full loaf instead of half.
