- 4 cloves garlic (chopped)
- 4 scallions (chopped, plus a little saved for fresh garnish)
- 2 bunches kale (green, curly, stems removed and discarded)
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/4 cup olive oil
- 2 Tbsp. fresh lemon juice
- 1 cup parsley leaves (and tender stems, plus more for garnish)
- 1/2 head romaine lettuce leaves (tough center ribs removed)
- 2 jalapeño peppers (green, chopped)
- 2 zucchini (large, shredded on large holes of grater)
- 1 bunch Swiss chard (green, stems removed and very finely chopped)

- 1 jalapeño pepper (sliced into rings, crushed red pepper, chopped fresh mint and other bright green herbs, optional)
