- 2 shallots (large, peeled and chopped)
- 3 inches ginger (piece of, peeled and chopped)

- 1 hot chili (cut in half lengthwise)
- 1 strip lime zest (from 1 lime)
- 1 1/2 tsp. ground turmeric
- sea salt
- ground black pepper
- 3 cups water (filtered)
- 14 oz. full fat coconut milk (400 mL)
- 1 Tbsp. tamari soy sauce (gluten free)
- 1 Tbsp. miso (ligth)
- 14 oz. extra firm tofu (or block, 400 grams firm, pressed for 30 minutes)
- 2 tsp. avocado oil
- 1 Tbsp. arrowroot starch
- sea salt
- ground black pepper
- seasoning (any other, you like, garlic powder, chili powder, nutritional yeast, Old Bay even!)
- 2 cups cooked quinoa (or other grain you like)
- vegetables (cooked or raw, to accompany, I like roasted broccoli)
- sliced green onions
