- 1/2 fusilli (I like the mini fusilli by Barilla, but regular fusilli works)
- 1/3 cup sundried tomatoes (I like fresh ones not in olive oil. I’ve used the sundried tomatoes that are canned in olive oil and the former taste better for this dish)
- 1 bunch broccolini (stems cut)
- 4 garlic cloves (minced)
- 4 tomatoes (camprini, cut into eighths)
- 1 Tbsp. fresh thyme (minced)
- 1/4 cup grated Parmesan cheese (freshly)
- 1/3 cup olive oil
- freshly ground pepper
- kosher salt
- 1 bowl water (make sure it’s big enough to fit your broccolini)
