  • 1 cup self-rising flour (sifted + 2 tbsp)
  • 1 3/4 cups corn flakes
  • 2 1/3 cups rolled oats
  • 1/2 cup desiccated coconut
  • 1/2 cup brown sugar
  • 2 ounces dried apricots (finely chopped)
  • 2 ounces raisins
  • 2/3 cup unsalted butter (melted)
  • 1 egg (lightly beaten)
  • 1 tablespoon honey

    Directions

    1. Preheat oven to 350°F. Grease and line 2 baking trays.
    2. Combine dry ingredients. Mix in butter, egg and honey until combined. Roll into balls, each around 2 tbsp. Place on prepared trays, leaving 1 1/2 inches of space between each. Press lightly with fingertips to flatten. Bake for 10-12 mins. Let cool on trays.
