  • 3 1/2 cups whole wheat self rising flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground clove
  • 16 ounces mixed dried fruit
  • 3/4 cup dried apricots (finely chopped)
  • 2 bananas (ripe, mashed)
  • 3/4 cup orange juice
  • 2 eggs

    Directions

    1. Preheat oven to 300°F. Lightly grease and line a 9 1/2 x 5 inch loaf pan with parchment paper.
    2. Sift together flour, baking soda and spices. Add dried fruit. Whisk together bananas, orange juice and eggs then mix in. Transfer to prepared pan and bake for 50-60 mins, until a skewer inserted in the center comes out clean. Cover with a tea towel and let cool in pan.
    3. Serve warm, sliced.
