- 2 cups coconut milk (canned, or any other nut milk of your liking, mind you, coconut adds extra creaminess)
- 2 tsp. pure vanilla extract
- 1/4 cup sugar (or 2 tablespoons agave syrup)
- 1 Tbsp. cornstarch (dissolved in 1 or 2 tablespoons of water)
- 1 lemon
- 2 cups berries (any kind of ripe, very ripe! summer)
- 1/2 cup old-fashioned oats
- 1/3 cup slivered almonds
- 1/3 cup all-purpose flour
- 3 Tbsp. vegetable shortening (non-hydrogenated or coconut oil, I like shortening better as it’s quite neutral)
- 1/4 cup brown sugar (loosely packed)
- 1/4 tsp. sea salt
- 1 tsp. vanilla extract
- 1/2 lemon
