Everyone really liked, but would do some modifications next time. Don’t boil potatoes, cut into small pieces and fry before adding other ingredients (our potatoes turned to mush after boiling them). Use bacon grease to fry potatoes. Season as desired with paprika and other spices: pepper, Cajun, etc. We topped ours with sour cream. We halved the recipe our first time and had no leftovers, but I think if we made the full recipe, it would be good the next day with scarambled eggs added in.
