- 2 large carrots (peeled and grated on the large holes of a box grater)
- 1 purple onion (medium, finely sliced by hand)
- 5/8 cup sugar
- 5/16 cup kosher salt
- 1 bag french fries (frozen shoestring)
- 4 Tbsp. unsalted butter (melted)
- 3 cloves garlic (finely minced)
- 1/2 tsp. salt
- 3 Tbsp. freshly chopped parsley (coarsely)
