- 1/4 cup Quinoa Flour
- 1/4 cup white rice flour (superfine)
- 3/4 cup tapioca starch
- 1 tsp. xanthan gum
- 1 tsp. baking powder (See Grain and Aluminum-Free Baking Powder)
- 1/2 tsp. baking soda
- 1/2 cup coconut sugar
- 1/8 tsp. salt
- 1/4 cup coconut oil (melted)
- 2 large eggs (alternatively, use Homemade Powdered Egg Replacer or a flax or chia egg)
- 1 tsp. vanilla
- 1/3 cup almond milk (See Easiest Homemade Almond Milk here.)
- 1/2 cup strawberries (sliced, other berries would be great too!)
