- fresh ginger (the size of an egg, grated medium-fine)
- 1 1/2 cups all-purpose flour (plus a little more for the pan)
- 1 tsp. baking soda
- 1/4 tsp. salt
- confectioner's sugar (Sifted, for the top)
- 1 tsp. quatre epices (but I omit it)
