- 2 ears sweet corn (husks removed)
- 2 tsp. olive oil (divided)
- 1/2 cup sweet red pepper (chopped)
- 4 green onions (chopped)
- 2 medium tomatoes (chopped)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 cup crumbled feta cheese (I used fresh mozzarella)
- 2 Tbsp. fresh parsley (minced)
- 1 stick butter (unsalted)
- 1 1/4 cups semisweet chocolate chips
- 1 cup all purpose flour
- 1 cup corn chips (finely crushed)
- 1 envelope taco seasoning (used mild)
- 1 Tbsp. dried minced onion
- 1 egg (lightly beaten)
- 1 1/2 lb. ground beef
- 6 slices cheddar cheese
