- fine sea salt (as needed)
- 7 oz. chanterelles
- 7 oz. oyster mushrooms (king)
- olive oil (as needed)
- 1 shallot (medium, peeled and sliced)
- 2 cloves garlic (peeled and thinly sliced)
- 2 Tbsp. unsalted butter
- 1/4 cup dry white wine (or vegetable stock)
- 1 fresh thyme leaves (scant tablespoon, lemon thyme if you can get it)
- 1 handful Italian parsley leaves
- 1/2 cup gruyere (grated aged, or more to taste)
