- 4 cups fresh cherries (stems removed, pitted and halved)
- 1/2 cup water
- 2/3 cup sugar (for sauce)
- 1 lemon (juiced)
- 3 Tbsp. cornstarch
- 1 1/4 Tbsp. butter (melted, divided)
- 1 1/4 cups raw pistachios
- 9 graham crackers (about 1 sleeve)
- 1 pinch coarse kosher salt
- 4 pkg. cream cheese (softened to room temperature, 8 ounces per package)
- 1/4 tsp. vanilla extract
- 1 lemon (zested, divided, for filling)
- 1 1/4 cups sugar (for filling)
- 4 eggs
- 3 Tbsp. all purpose flour (regular and gluten free flour both work in this recipe)
- 2 cups fresh cherries (pitted and halved, for decorating)
- 1 1/2 Tbsp. sugar (for decorating)
- 1 lemon (zested and juiced, divided, for decorating)
