- 1/3 cup olive oil (California Sevillano)
- 1 egg
- 1 tsp. vanilla extract
- 1 cup zucchini (finely grated fresh)
- 2 Tbsp. plain yogurt (Clover Meadows)
- 1 cup all purpose flour
- 5 Tbsp. unsweetened cocoa powder
- 1/2 tsp. sea salt
- 1/2 tsp. baking powder
- whipped frosting (balsamic vinegar, optional, to taste)
- 2 cups heavy cream (Castle Rock)
- 1/2 cup sugar (more or less, to taste)
- 3 Tbsp. balsamic vinegar (your choice, try with 25 Star or Black Current Balsamic Vinegar)
