Description
Hearty and full of flavor, this creamy French veal stew will warm your heart and your belly with each bite. Tender veal is covered in caramelized mushrooms and onions in a thick creamy sauce. Instructions for this recipe are intended for a dutch oven. Give yourself plenty of time to cook the meat to ensure that it is tender and juicy. This stew will be ready to serve in an hour and a half.

- 1 kg meat (tender veal, cut into strips)
- 1 onion (peeled and whole)
- 4 cloves
- 3 carrots (peeled and whole)
- 1 leek (cleaned and whole)
- 2 bay leaves
- 2 Tbsp. butter (divided)
- 1 Tbsp. flour
- 5 pearl onions (peeled and whole)
- 150 grams mushrooms
- 1 Tbsp. flour
- 150 mL heavy cream

Directions
- In a large Dutch oven, add the veal, the onion pierced with 3 to 4 cloves, the carrots, the leek, and the bay leaves. Cover with salted water about 2 fingers over the meat and bring to a boil.
- Once boiling, remove the foam and impurities from the surface of the water. Cover and slowly boil about 2 hours until the meat is tender. Check often to make sure the water has not completely evaporated out. If the water level gets low, add more hot water.
- Separately, in a skillet, melt 1 tablespoon of butter. Saute the pearl onions with 2 teaspoons of sugar on low heat for about 5 minutes.
