Made this for Thanksgiving, and got raves. It was super delicious. I used Bartlett pears and they held up really well when poached. Used some old vanilla beans and a little honey along with the sugar and water in the poaching liquid. I had a dozen pears, so I poached all of them and used just 3 for the tart. I had some almond paste I ordered from King Arthur's web site. Used the tart shell recipe from David's blog as well. Will definitely make this one again. Delicious!
