- 5 onions (medium to large, 2 sweet, 2 yellow, 1 red or any mix)
- 2 shallots
- 4 garlic cloves
- 8 thyme sprigs (tied together with kitchen twine)
- 1 tsp. salt
- 1 bay leaf
- 1 cup dry white wine
- 1/2 cup cooking sherry
- 1/2 cup brandy
- 32 oz. chicken stock (homemade if you have it. The rest of us mortals use store bought- It's fine)
- 4 1/2 inches french bread (thick slices rustic, cut to fit your soup crocks or bowls)
- 8 oz. grated Gruyere cheese
