  • 8 baby potatoes
  • 1 head green leaf lettuce
  • 2 hard boiled eggs (quartered)
  • 5 ounces tuna (in water, drained, flaked)
  • 1 red pepper (cut into thin strips)
  • 2 tablespoons pitted kalamata olives
  • 2 tomatoes (cut into wedges)
  • 6 anchovy fillets (halved lengthwise)
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic (peeled and crushed)

    Directions

    1. Place the potatoes in a saucepan of salted water on a medium-high heat. Bring to a boil and cook for 10-15 mins, until tender. Drain, cool and halve.
    2. Arrange the lettuce, potatoes, egg, tuna, pepper, olives and tomato in bowls. Top with the anchovies. Whisk together the oil, vinegar, mustard and garlic in a bowl. Season, then drizzle over the salad to serve.
