I made my own version of this inspired by the bacon & egg hashbrown casserole at Cracker Barrel. I baked julienne potatoes with cubed ham, then wrapped that up with crumbled bacon, eggs, and some french fried onions. So delicious and very easy to freeze and re-heat!
