- 3 bell peppers
- 1/2 cup walnuts
- 3 Tbsp. tahini
- 4 cloves garlic (chopped)
- 3 tsp. red wine vinegar
- 2 tsp. sugar
- 1/2 tsp. ground cumin
- 1/4 tsp. cayenne
- salt (I added a little less than 1 teaspoon)
- pepper (to taste)
- 1 head cauliflower (cut into bite size florets)
- 2 Tbsp. olive oil
- seasoning (Mix of your favorite, I used cumin, turmeric, and chili powder)

- 1 cup freekeh (cooked according to package instructions)
- greens (Your favorite, I used baby spring mix)
- 3 green onions (chopped)
- 1/2 cup cilantro (chopped)
- 1/4 cup slivered almonds
- 1/2 yellow bell pepper (or red, seeded and chopped)
- 1 avocado
