- 1 1/2 cups freekeh (cooked, cooked according to the product packaging)
- 1 bunch kale (fresh, with stems removed)
- sweet potatoes (Baked/Boiled/Microwaved)
- 1/3 cup mixed nuts (such as walnuts, pumpkin seeds and cashews)
- 1/3 cup tomatoes (I suggest cherry or grape tomatoes)
- 1/3 cup mixed bell peppers
- 1/3 cup mint (mixed fresh chopped, and basil)
- salt (/pepper to taste)
- extra-virgin olive oil (optional :)
- 1 clove garlic
- 1 inch ginger root (minced)
- 1/2 tsp. salt
- 1/4 cup cilantro leaves (fresh)
- 1/4 cup honey (or more according to your liking)
- 1/2 cup olive oil
- 1/3 cup fresh lime juice
- 2 Tbsp. white balsamic vinegar
