- 1 hokkien noodles (serving of Thin, Yellow Noodles)
- 3 king prawns (Large, deveined)
- 3 fish balls (Fresh, sliced in half)
- 3 slices pork fillet
- 1 clove garlic
- 1 handful choy sum (trimmed)
- 2 stalks spring onion (chopped)
- 2 Tbsp. dark soy sauce (or more if you like it darker)
- 1 Tbsp. light soy sauce (or more to adjust saltiness)
- 1 red wine (generous pour/splash of Shao Xing Wing or Foochow)
- white pepper (to taste)
- 1 cornstarch (heap teaspoon)
