- 1 pkg. dry yeast
- 1/3 cup warm water (about 100 degrees)
- 2 1/4 cups water (tepid)
- 2 Tbsp. olive oil (good quality, plus more for the pan and to paint on top of the bread)
- 3 cups bread flour
- 4 1/2 cups all purpose flour
- 1 Tbsp. salt (plus coarse salt, fleur de sel if you have it, otherwise Kosher salt for sprinkling over the top)
- 3 Tbsp. fresh rosemary (finely chopped, can use sage or other herbs such as thyme or oregano, but whatever herb you use, do use fresh herbs, do not use dried)

Very easy and super flavorful. Made it in two 9x9 pans so it came out a lot thicker than I excpected. May try a 9x13 pan next time. Served it with chicken gnocchi soup and one entire loaf was devoured. Could not be happier. Assembly was easy. I also put a small bowl of water in the oven to generate a lot of steam. Definitely adding this to our rotation.

This recipe is delicious! It does make a LOT of bread though. But that shouldn’t be a problem because you are going to want to share it with everyone. The instructions were clear and the photos helped immensely. I made one large focaccia loaf and used 3 different toppings on different sections. So now I have 3 varieties of focaccia in my freezer for future dinners.

its ok. Crispier then the ones you buy at the store/bakery. i dont think its worth the time for the results.

This was my attempt at Focaccia bread. I was not expecting the process to take so long, however the bread came out great. I would like to stress that the dough should be generously brushed with olive oil before baking as my bread came out a tad dry on top due to my reluctance in brushing too much oil. Also I sprinkled rosemary on top before baking to make it look nice.

Good for a first bread. Recipe was really easy to follow. We used dried herbs, which turned out well. The yeast we used was meant for bread machines so we think the second rise was too long which resulted in a flatter bread than we expected. Overall very satisfied!
