- 1 cup all purpose flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. flaxseed meal
- 1 tsp. apple cider vinegar
- 1 Tbsp. coconut sugar (or regular sugar)
- 2 Tbsp. coconut oil (melted and cooled, or sub melted vegan butter)
- 2 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1 cup non dairy milk (I like to use unsweetened vanilla almond milk)
- 3/4 cup frozen blueberries (or fresh, if using frozen, toss berries with 1 tablespoon flour first)
- 1/3 cup mini chocolate chips (dairy free if desired)
- coconut oil (or vegan butter, for greasing the griddle/skillet)
