- 1 Tbsp. sugar substitute (or more to taste)

- 1 dash canela (optional)
- 1/2 tsp. maple extract (optional)
- almond milk (or half and half as needed)
- 1/2 tsp. baking powder (additional)
- 1 Tbsp. melted butter (optional, but recommended)

I am thrilled to have finally found a healthy pancake option that has the actual texture of a pancake. I slightly modified the recipe and added a mashed banana and a little almond extract in place of the maple extract. Next time I may include a few crushed nuts for added texture. The batter texture doesn’t have the creaminess of a traditional flour pancake batter, but cooks the same. I was even able to get the crispier edge texture I love. When cooking, I cover with a glass lid to achieve a fluffier rise. Unlike flour pancakes this recipe is very light and fluffy and doesn’t make me feel full and bloated like traditional flour pancakes and it also allows me to have a small bread-like fix as I diet.

Used butter for each one I made I also added more cinnamon because I love it and it has a lot of benefits.

Awesome! I️ added an extra 1/2 teaspoon of baking powder so they would be extra fluffy waffles

Amaaaaaaazing! I am finally eating decadent pancakes again. Bonus is my modified keto eating husband loves them, too. We sometimes eat for dinner😜

Best I've had. Easy to make. Cooked up just like regular waffles. Next time going to make extra for sandwiches.
